Meatloaf Muffins and Loaded Sweet Potato Soup

So, I posted a picture on instagram and asked if anyone had tried meatloaf muffins. I am not a huge fan of meatloaf, but I was intrigued by a recipe on skinnykitchen.com

A fellow instagram friend shared a recipe she uses that her family loves, so I tried it using my organic ground beef. We don't eat a ton of beef, but I do crave it once in awhile.

These. Were. Ah-mazing!


Recipe:
1 lb of ground beef {or turkey could be used}
2 carrots diced
1 onion diced
2 tablespoons of Tastefully Simple Ultimate Steak seasoning
1/2 cup Italian seasoned bread crumbs
1 egg
Salt/pepper to taste
1/2 cup Ketchup
1/2 cup BBQ sauce
Worcestershire sauce

Pre-heat oven to 375

**Make sure you don't overwork the meat, so start by adding all of the other ingredients first.

1. In a pan, soften the carrots and onion w/ evoo
2.  In a bowl, mix egg, bread crumbs, seasonings, and a few dashes of worcestershire sauce.  Stir in cooked veggies. THEN add the meat, mix with hands [you can use gloves if you want] and push into muffin tins (I sprayed with evoo)
3.  In a small bowl add ketchup, bbq and worcestershire sauce (few splashes!) spread on top as the 'frosting'.
4.  Bake at 375 for 25-30 minutes.  They'll start to separate from the edges of the tin when they're done. 
  
Loaded Sweet Potato Soup

 I had a few sweet potatoes and some carrots and figured a soup with be tasty. I was right!

Recipe:
2 sweet potatoes, peeled & cubed
2 carrots peeled & diced
1 onion peeled & roughly chopped
2 cloves of garlic
1 1/2 boxes of chicken broth (or veggie but chicken has more flavor)
Sea salt/pepper to taste


Carefully use immersion blender.  Add a little more broth if you need to. Enjoy!


Possible toppings:
Mexican cheese
Bacon
Green onions
Greek yogurt or sour cream
So good!

I served with a side of angel hair pasta {garlic/evoo}


Load that baby up!


Now, I usually try to eat clean.  However, I do love food and so I make sure to enjoy these things as treats and eat sparingly. I also am looking forward to cleansing again soon so I can get back on track! 

But that's the beauty of AdvoCare; I can eat real food and I always have Carb-Ease to help me of I am going to eat a few more carbs than I am used to. Or Lepti-lean which helps curb appetites so that you don't overeat.   Meaning, you eat what you actually need vs. what we think we want. I love these products!

Homemade Sloppy Joes

  • 1 package of organic hamburg
  • 1 medium onion chopped
  • 1 shallot chopped
  • 2Tbs EVOO
  • 1/4 cup organic ketchup
  • 1 can of tomato paste
  • 1/2 cup of water
  • 1 Tbs brown sugar
  • 2 Tbs chili powder
  •  A dash of cumin
  • A few shakes of garlic powder
  • Dash of cinnamon 
  • sea salt/pepper to taste
Add chopped onion & shallot to a med-hot pan with EVOO {throw a little salt to soften quickly}
Add the burger once the onions/shallots become tender
 Cook until hamburg is not longer pink
Add the rest of the ingredients & warm through
stir until thickened
Serve on a bun if you're not afraid of carbs
I will never buy the canned crap again. =D
