What I'm Loving Wednesday



I think I've found a nice little groove for this old blog here, and I'm excited to execute it.  Since I'm focusing on 'gratitude' this year, I want to dedicate a weekly post to what I am loving in life.  I figured since I can be rather random, this would be the perfect place to post all things I'm happy about.

Food. I just love food; correction, really really good food!! I ordered some Tastefully Simple from my girl Cathy and this recipe screamed New Year's Day.  I had fully believed we were going out NYE, so I wanted an easy dinner to cook itself.  Well, we stayed in but it was still really nice to just let this simmer in a crock pot all day.  It smelled so good!


The pork shoulder literally fell off the bone and I just shredded it. I remove all the fatty parts and then placed it back in the sauce.


You could dip, but you really didn't need to. OMG. I want another one.


This was the sauce I used!



Another recipe is one that my husband found!! Back Alley Ribs.  He has now made these twice, they are THAT good!  {Clearly we enjoy pork...I need to get back into chicken!}

I'm loving that I started the New Year off on the right foot!  I found this to be inspiring.


While the kiddos napped, I took Holly on a long walk.  The sun was shining and I had to take a photo, since ya just never know when the sun will come out again!



And lastly, books. I am on a big old book kick again lately and one that I am listening to currently is this.  It's quite interesting and if you pick it up, you may find that you learn a thing or two.  It's eye opening because even though you may think you're being positive and manifesting what you want, your thoughts could still be going in the wrong direction...more on that later. I have to re-listen to parts of it. Highly recommend it though!!

Life Lately

June has always been a crazy month.
When I was teaching, it'd be the end of the year, wrap everything up insanity.
On top of that, my husband works two weeks straight, 9am-10pm at his job each June.
It's a huge Tent Event at the mall where lots of cars are for sale for the dealership he works for.
I miss him dearly, but I know how important it is to him, so I support him as much as I can!
On Sunday, he actually got home a little after 5, so we were able to have dinner together!
I spent the morning in the garden, still weeding away!
And then worked in the kitchen, whipping up a batch of homemade hummus,
{the ones I made for V-Day, hubs kept requesting again!}
Homemade Over the Rainbow Mac & Cheese {Seriously, hands down best ever.}
It was on Oprah Winfrey as one of her favorites, it's Patti LaBelle's recipe
I also threw together one of my famous salads.
I picked up some hormone/antibiotic free babyback ribs from BJ's
and we decided we were going to try them a different way.
Smoking them for a bit:
Then tossing them on our fire pit with charcoal:
 It was so nice to have my husband home with me before sunset!

It's raining here today, which is quite a reprieve from the 92 degrees we got up to yesterday!
My flowers needed the water, and now I don't have to do the work!

Super Easy, Man Pleazin Ribs!

 ****This recipe is for slow cooked, all day ribs--not a quick recipe****

Start out with a package of ribs--we like BJ's no hormone, no anti-biotic ribs.

Pre-heat the oven to 350.



Wrap a baking sheet with foil & wrap the ribs in foil.

Bake for 30 minutes.

Pick your favorite BBQ sauce.  We have tried a bunch, but we always go back to this, Kraft Original. 
{You can of course add your own kick(s) to it!}


After 30 minutes, remove foil from the ribs & TURN THE OVEN DOWN to 200. 
Slather the BBQ sauce on, and put back into the oven.  

Do this a few times throughout the day.  

I put the ribs in at 10 & took them out around 5:30.


Remove from foil & serve!
