Life Lately

June has always been a crazy month.
When I was teaching, it'd be the end of the year, wrap everything up insanity.
On top of that, my husband works two weeks straight, 9am-10pm at his job each June.
It's a huge Tent Event at the mall where lots of cars are for sale for the dealership he works for.
I miss him dearly, but I know how important it is to him, so I support him as much as I can!
On Sunday, he actually got home a little after 5, so we were able to have dinner together!
I spent the morning in the garden, still weeding away!
And then worked in the kitchen, whipping up a batch of homemade hummus,
{the ones I made for V-Day, hubs kept requesting again!}
Homemade Over the Rainbow Mac & Cheese {Seriously, hands down best ever.}
It was on Oprah Winfrey as one of her favorites, it's Patti LaBelle's recipe
I also threw together one of my famous salads.
I picked up some hormone/antibiotic free babyback ribs from BJ's
and we decided we were going to try them a different way.

 It was so nice to have my husband home with me before sunset!

My brother & husband loved the ribs.
I should have gotten a snapshot of their faces covered in BBQ sauce.
Dinner was fantastic.

I'm getting my niece later today, and we're going to visit Uncle Joey & Uncle Ty Ty...
and a clown.
We'll see how this goes!!
It's raining here today, which is quite a reprieve from the 92 degrees we got up to yesterday!
My flowers needed the water, and now I don't have to do the work!

  1. The meal looks like it turned out great! I'm gonna have to try that mac and cheese! I also prefer ribs slow cooked in the oven all day long. They come out fall-off-the-bone tender.

  8. Yum those ribs look amazing! As do the cupcakes of course :) I'll be getting my bake on in the kitchen next week. I'm making monogrammed sugar cookies for my sister's wedding and a s'mores dip for a picnic too.

  10. I wish I could eat dinner at your place every night! :) My mouth is watering over those ribs!! Yum! So glad the tent sale will be over soon for both you and your husband!

    My best friend (and now nextdoor neighbor!) Ben and I have been taking turns cooking each other dinner every other night. Last night, I made us falafel pitas and a fresh summer corn salad. It was surprisingly delicious! Especially for me and my cooking skills!
