Pasta Caprese & Weekly Menu

This Week's Menu:
Monday: Meatless Monday--Pasta Caprese
Tuesday: Girls' Night--I'm bringing a dessert! (Hubby, you're on your own!)
Wednesday: Pulled Pork in Slow Cooker
Thursday: Tangy Cherry Chicken
Friday: Bistro Style Sirloin Burgers
Saturday: Sushi?
Sunday: Sauce
Pasta Caprese:
1 lb of rigatoni (pasta should have ridges of some sort to help cheese stick!)
1/2 pound mozzarella
1 cup fresh basil leaves torn
5-6 fresh tomatoes on vine, cubed
1 T of capers
1/4 cup good quality extra virgin olive oil
Garlic & pepper {Tastefully Simple}
Salt/pepper to taste
Boil water for pasta & follow instructions
Prepare the fresh ingredients
When pasta is done cooking, strain & toss back in the warm pot with tomatoes, mozz cheese, basil, capers, & evoo
Stir & season to taste.
It's a great summer meal, but also good for nights where you don't want something too heavy.
It's like "Caprese Salad" but with pasta!
