Zumbaaaa & a Pasta Bake

Happy Tuuuuuesday!
You know those annoyingly perky, bright-eyed,
overly happy-for-no reason
girls who had too much coffee and sleep,
so they are wide awake,
with their high ponytails bouncing around
while doing a 9am Zumba class?
Oh yeah, that was just me.
It doesn't happen often,
but I woke up raring to go today!
I'm sipping on a power smoothie {just add a scoop of protein powder}
and wishing I always had this determination!
I wish I could video this class...
so many old people, it is SO cute.
Here, maybe some of my motivation will rub off on you:

I'm going to try and organize my closet...sounds like an exciting day!
Then run some errands and figure out dinner,
and lunch tomorrow,
since my amazing mother-in-law will be dropping by!
Oh, have you heard about Bubble Up Pizza?
I need to try this!
I worked out, so it's OK, right? =P
Last night was a super easy dinner and Joe loved it.

Pasta Bake:
1 box of pasta (I used ziti)
1 jar of good quality sauce (I didn't feel like making my own)
1/2 cup Parm Cheese
2 Tbs of cream cheese (I used low fat kind)
1 onion chopped
2 garlic cloves chopped
1 package of meat (I used organic beef)
3/4-1 cup of shredded mozzarella cheese
Italian seasoning

Pre-heat oven to 375
Boil pasta according to directions in salted water.
Soften onion & garlic in EVOO for a few moments, don't caramelize. (Add salt to quicken)
Add meat & cook until browned.
Add Italian seasoning for taste
Stir in a little cream cheese to flavor.
Once pasta is cooked, drain and stir jar of sauce, 1/2 of Parm Cheese & meat mixture.
Pour into a greased (PAM) casserole dish and cover with remaining cheeses.
Bake 20 minutes (or until husband comes home...I turned the oven off but it still crisped up a tad)
You could totally make it "healthier" with wheat pasta & ground turkey breast...
and omit some of the cheese.
But I can't guarantee it will taste as good as ours!
I'll leave you with this cool acoustic version of "We Found Love"
Our cool down song at Zumba.
I liked it!

Have a great day!

  1. I love how great Zumba makes you feel. I'm going tonight! Sounds like you have a good day planned - I've gotta organize my closet too I'm just too overwhelmed to even start!

  2. This looks SO yummy! Thanks for sharing! Thinking about making it for company this weekend!

  4. Love that acoustic version! I have never heard it before

  5. I LOVE days when I wake up feeling like that! Despite only getting three hours of sleep last night, this has totally been me today, too! Maybe we are kindred spirits or something of the life.

The three shots of espresso in my skinny mocha probably helped, as well...keep up that awesome mood!!! :)

  6. Love your enthusiasm today!! Hopefully I can catch some and have it hold me over till tonight when I can get to the gym!

Good luck with the closet organization!! I have been putting mine off since June!

  7. I have never taken a Zumba class but everyone always talks about how much they love it! I may need to try a class!

Good luck with the closet organizing, I attempted to go through mine last night!

  9. I seriously need to get on this zumba bandwagon...I fear for how uncoordinated I will look if I even attempt it. Love your positive vibes in this post! That acoustic version of "We Found Love" is now on repeat- love it.

  10. Yay for your sweat session! I love it! That pasta looks so good! I never think to use cream cheese but that sounds so yummy.

  11. This looks so yummy. Girl, I gotta get motivated. I have all the DVD's for Zumba and did it faithfully but just have gotten off track.

  12. Love it.... Yummy

  13. Ooooh, I love that version of We Found Love!

Zumba is so much fun! Lately it hasn't been fitting into my schedule at all, so I've just been running. Boring! :/

  14. The pasta bake looks sooo yummy! I could so use a cooking lesson or two from you haha. And go you, being the peppy girl at the gym! I still need to sign up for a zumba class.

I'd love to hear from you. Each & every comment is so very much appreciated!! :)
