Zumbaaaa & a Pasta Bake

Happy Tuuuuuesday!
You know those annoyingly perky, bright-eyed, 
overly happy-for-no reason 
girls who had too much coffee and sleep,
so they are wide awake,
with their high ponytails bouncing around 
while doing a 9am Zumba class?
Oh yeah, that was just me.
It doesn't happen often, 
but I woke up raring to go today!
I'm sipping on a power smoothie {just add a scoop of protein powder}
and wishing I always had this determination!
I wish I could video this class...
so many old people, it is SO cute.
Here, maybe some of my motivation will rub off on you:

I'm going to try and organize my closet...sounds like an exciting day! 
Then run some errands and figure out dinner, 
and lunch tomorrow, 
since my amazing mother-in-law will be dropping by!
Oh, have you heard about Bubble Up Pizza?
I need to try this! 
I worked out, so it's OK, right? =P
Last night was a super easy dinner and Joe loved it.

Pasta Bake:
1 box of pasta (I used ziti)
1 jar of good quality sauce (I didn't feel like making my own)
1/2 cup Parm Cheese
2 Tbs of cream cheese (I used low fat kind)
1 onion chopped
2 garlic cloves chopped
1 package of meat (I used organic beef)
3/4-1 cup of shredded mozzarella cheese
Italian seasoning
Salt/Pepper

Instructions:
Pre-heat oven to 375
Boil pasta according to directions in salted water.
Soften onion & garlic in EVOO for a few moments, don't caramelize. (Add salt to quicken)
Add meat & cook until browned.
Add Italian seasoning for taste
Stir in a little cream cheese to flavor.
Once pasta is cooked, drain and stir jar of sauce, 1/2 of Parm Cheese & meat mixture.
Pour into a greased (PAM) casserole dish and cover with remaining cheeses.
Bake 20 minutes (or until husband comes home...I turned the oven off but it still crisped up a tad)
Enjoy!
You could totally make it "healthier" with wheat pasta & ground turkey breast...
and omit some of the cheese.
But I can't guarantee it will taste as good as ours!

  5. I LOVE days when I wake up feeling like that! Despite only getting three hours of sleep last night, this has totally been me today, too! Maybe we are kindred spirits or something of the life.

    The three shots of espresso in my skinny mocha probably helped, as well...keep up that awesome mood!!! :)
