Crockpot Chicken Artichoke & Sun-dried Tomatoes

It doesn't look pretty, but it was easy and tasted delicious!

Crock pot Chicken Artichoke & Sun-dried Tomatoes
  • 4 frozen organic chicken breasts
  • 3 small jars of artichokes (or more/less according to preference)
  • 1 package of sun-dried tomatoes
  • 1 can cream of chicken condensed soup
  • 1/4 cup of dry white wine
  • 1/2 cup of chicken broth
  • 2 chopped garlic cloves
  • Cream cheese (or the Philly Italian Seasoned spread)
Place chicken in crock pot and cover it with the remaining ingredients EXCEPT for cream cheese--stir that in the end.  You could add mushrooms or black olives, I just didn't have any.
Put crock pot on low & cook for 6-8 hrs. Chicken will literally fall apart. 

We liked that it wasn't soupy but it was really tender and moist.

You could serve over rice or noodles.
I served it with leftover mushroom risotto from the night before {Giada's Risotto}  & a salad.

  1. ok another crock pot recipe i will try!! seriously those are my favorite types of recipes. why? because i don't have to do much when i come home from work to prepare for dinner, thank you crock pot!
