Recipe & Weekly Menu

Weekly Menu:
Monday- White Bean Chicken Chili- bad blogger--no photos, sorry--
Recipe:
2 14.5 oz cans Great Northern White Beans
2 lbs boneless skinless organic chicken breasts
4 garlic cloves minced
1 tbsp evoo
2 medium onions chopped
1 1/2 tsp oregano
1/4 tsp ground cloves
1/4 tsp cayenne
6 cups chicken stock or broth
3 cups grated cheddar
Toppings: Greek yogurt (plain) cilantro, salsa
Cube & cook chicken until tender. Heat evoo on med-high heat. Saute onions until soft & translucent--add a bit of salt to speed this up--Stir in spices, saute 5 more mins. Add beans and stock ~bring to a boil. Reduce heat and simmer for about an hour. Add chicken and 2 cups of cheese --stir until cheese melts. Season with salt/pepper to taste. Finish off with remaining cheese & toppings.
Heats ya right up on a cold wintery night!

Wednesday: Girls Night @ Matty's--I'm bringing a pizza dip

 I haven't made a menu these last few crazy weeks,
but I am hoping to stick to a schedule!
Who knows though, Joe has off the whole
weekend and we may be spontaneous!
ps. I decided I will log my daily workouts under the "healthy" tab,
if you're so inclined to see what I am up to workout wise. 
I'm hoping this holds me responsible and perhaps will inspire you to sweat a little too!

    Avocado chicken parm sounds delish! I've been loving avocados & making guacamole lately! I want to start making a different recipe every night, or at least a few different nights a week :)
