Perfect Pumpkin Bread



I tried out a Food Network recipe, but made some changes.  It's soft, moist, and has tons of pumpkin flavor!! The following makes enough for two loaves.  {One to keep & one to give away!}

Pre-heat oven to: 350 degrees

Grease 2 loaf pans {I used cooking spray}

Ingredients:

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly bean
  • 16 ounces canned unsweetened pumpkin
  • 3 1/2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2ish teaspoons of pumpkin pie spice
  • 2/3 cup water


Directions:
 Stir together sugar and oil. Stir in eggs and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Divide batter between two loaf pans. Bake for about an hour or until both loaves are browned & the toothpick comes out clean of batter. Let them cool completely before you take them out.
It's the perfect gift to give to those whom you cannot spend the actual day of Thanksgiving with.
